Spice Cake with Pears

Spice Cake with Pears 

This cake reminds me of days where the air is crisp and cold, leaves are rustling around, and perhaps we are getting our first snow fall. This cake is lightly sweet, with warm spices, and a good bit of butter.

Ingredients

Spice Cake:

2 cups flour

2 tablespoons cornstarch

1 tablespoon baking powder

½ teaspoon salt

2 tablespoon cinnamon

1 tablespoon ginger

1 teaspoon allspice

1 teaspoon nutmeg

1 tablespoon vanilla extract

3/4 cup of butter (melted)

3 large eggs

1 cup of milk

Brown sugar pears:

1 sliced red pear (sliced into ¼ inch slices)

1 cup of brown sugar

½ cup of butter (melted)

Whipped Cream:

1 pint heavy whipping cream

2 tablespoons sugar

Preheat over to 350

Grease sides of two 9 inch cake pans

Combine dry ingredients for cake in one bowl and wet ingredients in another bowl. Slowly mix dry ingredients into wet ingredients and set aside. 

Combine melted butter with brown sugar for pear topping and place half in each of the cake pans. Then place pear slices in bottom of cake pans with no slices touching.

Pour cake mix over pears and brown sugar butter mixture.

Whip the cream with sugar until firm and place in fridge.

Once cakes have cooled, trim off tops (side without pears) to ensure they are flat and flip out of pan. Place ¾ of whipped cream on first layer and then place second cake on top.

Finish with dollops of whipped cream and fresh edible flowers to garnish.
