Miso Soup with Spinach

It is cold here in Indiana today. Like 1 degree outside cold so its the perfect moment for a bowl of miso soup. I always forget how amazingly simple miso soup is. While normally miso soup would have tofu in it I chose to make mine with spinach and onion. The recipe is constructed so that you can choose to make 1 serving for yourself or multiply it for more people.

Ingredients

1 cup of vegetable stock 

1 and 1/2 tablespoons of miso 

1/4 of a sweet yellow onion 

Handful of spinach

Cut the onion into slivers and cook in pot with a little olive oil on medium heat until they just start to soften. Add stock to the onions and bring to a simmer.

In a separate bowl measure out the miso so it can be tempered. Add 1/4 cup of the stock to the miso and blend to temper the miso.

Once the miso is tempered add it to the simmering stock. Stir and allow to heat back to a simmer. Add spinach right before serving.
