Chocolate Pie

Sometimes you just really need chocolate pie. We really needed some chocolate pie. This flourless chocolate pie is simple and super easy to through together thanks to frozen pie dough from Trader Joes. You could totally be awesome and make your own pie dough but I wanted chocolate pie ASAP and I always keep some pie dough on hand for times like this!

Ingredients

Pie dough

2 3/4 cups sugar

1/2 cup cocoa powder 

1/4 tsp salt 

5 tbsp melted salted butter

2 eggs

3/4 cup evaporated milk

Preheat oven to 350 

Place pie dough in ungreased pie plate. You can give it a pretty edge on the crust with a crimp or braid but I went around with a fork to speed things up. Poke holes in bottom of crust using a fork.

Now what you should do for this step is place parchment on top of crust and add weights. I keep forgetting to order pie weights so I had to improvise. Parchment and a slightly smaller cake tin filled with an inch of water got the job done. Pop into 350 degree oven for 10 minutes or until it starts to set.

The time it takes the crust to set is all the time you need to make the filling. Start by mixing dry ingredients: sugar, cocoa powder, and salt. I had cocoa rouge powder on hand so I used that (hence the bright hue in this shot) but any cocoa powder would work.

Next add the melted butter and mix. Mix your milk and eggs and then add to the sugar, cocoa, and butter. After adding the milk and eggs it will change from this crumbly mixture to a very thin filling.

Remove pie crust from oven, take out the weights, then fill her up. Bake at 350 for 40-45 minutes until crust is golden and pick comes out clean from center of pie.

Let cool for at least 30 minutes before cutting. Serve slightly warm, cold from fridge, with whip cream or plain! Enjoy!
